LaCava

Where it all began. 

The first wine born at Cantina La Cava. Produced exclusively in the 2020 vintage, it comes from a small parcel of our oldest vineyard, where clay soils rich in iron give the wine depth, mineral tension and a unique character. A pure Sangiovese crafted in very limited quantities, telling the story of our beginnings and preserving, in every sip, the memory of where it all started.


Winemaking:
From the small Sangiovese parcel, the grapes are hand‑harvested and brought to the winery for vinification. Alcoholic and malolactic fermentation take place in temperature‑controlled stainless‑steel tanks. This is followed by 36 months of ageing in French oak tonneaux, then 1 year in stainless steel and an additional year in the bottle before release.


Tasting Notes:
An intense wine with a deep ruby colour and garnet reflections. On the nose, balsamic notes, ripe black fruit, pepper and hay emerge. On the palate it is soft, mineral and supported by velvety tannins.
